Gluten Free Awareness Month

Thank you Natural Health Center of Kalamazoo for having your Gluten Free open house on May 3, 2014. Not only did I meet many people at my cooking demo, I also picked up some great deals.

 

Did you know May is Gluten Free awareness month? Many stores will have specials on Gluten Free products. Not only is this a good time to stock up on sale products, but also to try something new, whether it is a Gluten Free product, fruit, vegetable, or exercise. Why not try one new thing this month?

 

I am trying slowing down while I am eating.  I saw a Facebook post that intrigued me.  After you sit down to eat, while looking at your plate of food, put one hand on your belly and the other one on your heart.  Take three deep breaths and really look at the food and smell it.  Say a thank you and slowly eat your meal.  Remember to chew, chew, chew your food.  I catch myself gulping my food, when I am in a hurry.

 

Slowing down and chewing your food improves your digestion. Want to try a new recipe? Why not try this one?

 

Pear and Cucumber Salad

1 pear washed and chopped into bite size chunks
1 cucumber washed and peeled. Cut in half and with a spoon remove seeds. Cut into chunks
pinch of salt
1 Tablespoon of fresh mint chopped
2 Tablespoons of olive oil
1 Tablespoon of lime or lemon juice.

Place all the ingredients into a bowl and mix. You can eat now or chill. You can change the seasoning to alter the taste. I also like cilantro. This basic recipe can be used as a side salad or place on top of a salad for a dressing. Another use is onto of fish.
